This shot had incredible sweetness and a heavy body – like chocolate flavoured honey. Made from Intelligentsia Black Cat it was shockingly smooth and balanced – without the usually dominant spice and chocolate notes and possessing instead a completely rounded and integrated profile. The shot was still pouring gorgeous reddish gold tiger stripes when the demitasse had filled.
As you can see espresso is not supposed to be watery and bitter…
